Havent played Origins and Odyssey in ages. But iirc your health regenerate over time. Finding rations out in the world is annoying though. For later ones once you've got a better build, use multi-shot and explosive arrows. Add fire damage/buildup/burn rate and you'll kill 80+ soldiers easily.
