We booked the Fast Ferries from Mykonos to Naxos and Blue Star ferry from Naxos to Santorini. Not a ton of difference in terms of actual boat/ship and facilities but huge difference between crew helpfulness and friendliness. We booked business class on both ferries and I do not think it was necessary on either.

This is first My understanding is that Blue Star is slower (5-5.30h) but generally more comfortable. Whilst Seajets uses the Worldchampion Jet which is faster (3h30m) but possibly less comfortable in rougher waters and largely/only indoor.
